Cut the salmon fillet into 1-inch chunks. Place about three-quarters of the salmon chunks into a food processor. Pulse a few times until the salmon is finely chopped but not puréed into a paste. There should still be some texture. Add the remaining quarter of the salmon chunks to the food processor and pulse just once or twice more, leaving some slightly larger pieces for better texture in the burgers.

2. Form the Burger Patties
Transfer the salmon mixture to a medium mixing bowl. Add the Panko breadcrumbs and gently mix everything until just combined. Be careful not to overmix, as this can make the burgers tough. Divide the mixture into four equal portions and gently form them into patties, about 3/4-inch thick. Place the formed patties on a plate or baking sheet lined with parchment paper. Cover loosely with plastic wrap and refrigerate for at least 30 minutes. This step is crucial for the patties to firm up and hold their shape during cooking.

3. Make the Tangy Dill Sauce
While the salmon patties are chilling, prepare the dill sauce. In a small bowl, combine the mayonnaise, finely chopped fresh dill, fresh lemon juice, Dijon mustard, and a pinch of salt and pepper.
